Meal Planning

Each Sunday I try to sit down and plan a weeks worth of healthy, affordable and yummy meals for our family. Here's where you can find some of our menus!

February 12-17

Sunday
Open faced grilled chicken sandwiches on whole grain ciabatta buns with avacado mayo, lettuce and tomatoes and sweet potato fries
Monday
Roasted Chicken with glazed baby carrots, roasted purple sweet potatoes and cauliflower
Tuesday:
Frozen pot roast with baby red potatoes, mushrooms, beets, carrots
Wednesday
Veggie Stir Fry with Udon noodles
Thurday:
I'm out of town so luckily lovely Nana will bring something for Joe and Owen
Friday
Homemade pizza with mushrooms, peppers, asparagus, tomatoes, basil and a combo of asiago/mozzerall cheeses

For our breakfasts this week I've also prepared a quiche with homemade crust, fresh eggs from our chickens, spinach, tomatoes and mushroom. Yum!
